Organic cured goat's cheese 400g approx. made with raw organic goat's milk, lactic ferments, rennet and salt.
Moulded rind, raw goat's milk cheese. Moulded and drained by turning. Maturing time of 2-4 months.
When cut, it is ivory-white in colour, with tiny eyes scattered throughout the cheese. In the mouth it has a firm, semi-hard texture, with a certain elasticity that is lost over time. Intense and persistent flavour, very clean throughout the mouth. Exquisite aftertaste of dried fruits and nuts and as the maturation process progresses, subtly spicy notes can be perceived.
